Welcome Back From The Last 2013 Summer Holiday!

We have spent the long week-end in summer’s last happy holiday. Did you know we are all celebrating “National Back To Work Day?” First of all, we hope you enjoyed the long week-end with family and friends. Secondly, we hope you are looking forward to the joys of Fall. We embrace the beginning of the new school semester, and the opening kick-off of our favorite foot ball teams.

As we pause to close out the summer season, we feel compelled to bring you a special announcement:

To wrap up those summer vegetables in a taste of fall-to-come, what could be better than a warm, nutritious bread? Naturally, we visited Elana’s Pantry for some ideas, and she lead us to some lovely chocolate zucchini bread. It’s going to be a wonderful season ahead, if we can continue to make it as delicious and nutritious as this recipe:

Paleo Chocolate Zucchini Bread

Ingredients: (Be sure to take this shopping with you!)

1 ¼ cups blanched almond flour

¼ cup cacao powder

¼ teaspoon celtic sea salt

½ teaspoon baking soda

2 large eggs

2 tablespoons coconut oil

¼ cup honey

¼ teaspoon vanilla stevia

¾ cup zucchini, grated

The Process: (What a great technique to utilize that zucchini that still overflows our garden!)

1. In a food processor combine almond flour and cacao powder

2. Pulse in salt and baking soda

3. Pulse in eggs, coconut oil and honey, stevia, then zucchini

4. Transfer batter to a greased 6.5 x 4 inch baby loaf pan, dusted with almond flour

5. Bake at 350° for 35-40 minutes

6. Cool for 2 hours

7. Serve

115757488We are also charmed with Elana Amsterdam’s latest book, which she summarizes as “a family-friendly collection of simple Paleo recipes that emphasizes protein and produce…” She offers everything from breakfasts to dinners to treats, all gluten- free and dairy-free, just like her blog.

Elana also has a huge nutritional guide with an extensive calorie counter for her recipes, at this convenient site.

With her books, you can learn to eliminate “gluten, dairy, grains, or processed foods” from your diet or from your family’s lifestyle. As the new season continues, we will bring you more recipes from Paleo cooking techniques. You might find “Paleo” is your solution for food allergy relief and improved all-around health. Do not let the name “Paleo” phase you. It simply means that the recipes utilize the foods our Paleolithic ancestors enjoyed for generations.
